1 banana + 2 eggs = 6 pancakes.


Start a griddle heating, stove top or oven.

Find a banana that's ripe enough to be easily mash-able. Mash it and then scramble in 2 eggs. Mix it well.

Pour out some pancakes, cook until brown on both sides - it is an egg, so make sure it is done.

Powdered sugar and lemon juice, maple syrup and butter if you want, but you can eat these by themselves.

I have experimented adding allspice, vanilla, cinnamon, some other stuff. It lends itself to that, and sure makes for quick food.
