Fish on the grill

I try to stay away from too much red meat but I love to grill. Plus I live in the PNW where we have really excellent seafood.

I always found cooking fish on a grill to be a pain in the ass and fraught with hassle. But then I tried this deal and it works like a charm. I get awesome grill marks and coloring on the fish and zero sticking.

My own favorite was sea scallops (the big ones) on skewers with just Italian dressing to give them garlic and oil and a little zing from the vinegar. All they needed was rice and something green and they were fantastic. I did have a steel grill plate for fish and veg, but it was less than ideal. The mat is better.
