What's for Dinner, Sat., Aug. 27, 2016

On summer weekends during harvest season, I like to spend at least part of my weekend making vegetable dishes. From my own garden, I have a good supply of green beans to work with today. I’m thinking beans with tarragon sauce.

I have good supplies of all the herbs, too. I’ll mix up some parsley-walnut pesto, for sure. Maybe make some lemon balm tea. I’d really like to make some basil tea, but not sure if I want to use up my basil so fast.

They’re not from my garden, but have three beautiful zucchinis and some plum tomatoes, too.

I’ll have vegetable dishes all day long and no formal lunch or dinner.

The flank steak at the restaurant we went to last night was a melt-in-your-mouth experience. Enjoyed the seafood, too. Best of all, the place wasn’t too busy–on late summer weekends, many Jerseyans are at the shore, getting in the last few weekends before the fall season kicks into gear.

with a dry rub. Veggie mac salad.

OK, I had it for lunch. I'll just pick around for dinner tonight over some wine.

at least at my house. We had fresh tomato sauce with campanelle pasta, roast veggies (zucchini, yellow squash, red bell pepper and carrot with fresh rosemary) and garlic bread. There's an apple crisp cooling, waiting for when we're not too stuffed to eat again.
