What's for Dinner, Thurs., Apr. 13, 2017

The RG is off on a tour of some of the southeast's newest, most innovative, and popular restaurants. He's in Atlanta tonight; the chefs are friends of his son, who is also in the specialty foods field. Some of the dinners are chefs cooking for other chefs. Should be interesting. Now me, I'm in the garden, so tonight is a clean-out-the frig night. It will be pasta with red sauce. It has vegetables and chopped steak in it.

Watercress salad with pear and tiny cheese bits. Toasted almonds on top.

1. Yummy Spring Salad

Found this Celery Salad recipe http://thinrecipes.com/2012/02/05/this-celery-salad-is-not-a-superbowl-recipe/ but didn't have all the ingredients. So here's the version I made. I cannot leave this alone it is so good, and sorry I do say so myself.

Celery Salad

Ingredients
1 head Celery, stalks sliced 1/4 - 1/2 inch thick
1 small Red Onion, sliced paper thin
1/2 cup cooked chick peas (canned or fresh)
1/4 cup Dried Cranberries
1/4 cup pumpkin seeds
1 Tablespoons Italian Seasoning
1/2 cup Part Skim Ricotta Cheese
1/2 cup Mayonnaise
Salt and pepper to taste

Instructions
Place all ingredients in a bowl
Stir to combine thoroughly
Add the pumpkin seeds on top
Let sit for 10 minutes for flavors to combine
Serve room temperature or cold

3. Seafood casserole

Shrimp, bay scallops, squid, mussels, crab. In a creamy lobster sauce with artichokes, mushrooms, carrots, celery, onion and egg noodles. A touch of sherry and nutmeg. All topped with buttered bread crumbs.
