Recipes using lettuce - not salads

We had a mild, very wet winter followed by a warm snap. As a result, my lettuces are starting to bolt. Any recipes for using lettuce, other than eating them raw? I'm literally (yes, literally) up to my ears on lettuce.

Lettuce is also a good addition to lots of dishes when it has been shredded first.

I think there are a lot more recipes for cabbage than lettuce though. How's your cabbage doing?

2. I used to buy several bunches of kale and make up baggie each

filled with kale and cored sliced apple, banana slices and other fixings for smoothies. Then i'd freeze all the baggies. When i was ready for a smoothie i'd take one bag out, put it in the blender with water and spices like cardamon and press on. Did not matter that the veggies broke down or the fruit went slightly brown when frozen because they were going to be blended into oblivion. Worked like a charm. I also used to make baggie filled with savoury stuff like kale, cherry tomatoes and celery and freeze them. When i took out one bag of them i'd add pepper and salt and hot sauce and then blend with water. The tomatoes were hard as ice cubes but they made for great smoothies. I am sure it would work for lettuce too.

I vaguely remember a Julia Child recipe for lettuce braised with garden peas, I think it used chicken stock and a little splash of white wine. It was good but my lettuce usually went into salads. To keep lettuce fresh for a couple of weeks (at least), rinse the leaves in a pan of water, shake most of the water off, and roll them in a single layer in a part of a roll of paper towels. Then put the rolled up leaves/towel into a plastic bag in the fridge. The paper towels absorb any water that would contribute to rot and then release it to keep the leaves fresh.

It's still a "salad" but with a delicious hot dressing that slightly wilts the lettuce. Also good on spinach or endive. A PA Dutch thing. You can also buy it in jars online.

7. Assuming they're not iceberg, how about using them as wraps-- similar to Greek grape leaves...

Or if some of it is iceberg, chop it up and use it as a rice substitute. Mixing it in with riced cauliflower might be worth a shot.
