The recipe calls for "Locatelli" cheese. I'm guessing that most of y'all know that's a brand of very good Peccorino Romano cheese. Any Romano will do, as will Parmesan or Asiago.

That's about the easiest thing you can do. About equal amounts of corn (canned or nuked frozen) and beans, and then use what's in the fridge - chopped pepper, onions, celery, mushrooms, carrots, etc. Spices like oregano and cilantro are always good. Be creative.
