My hubby and I always feel a little guilty eating avocado here in Toronto, but we wanted to do this recipe because we love it (and we thought we might snag a little bit of the meme-space around it for our YouTube channel!).
But yeah, buying avocado here means we're purchasing a huge carbon footprint, regardless of how good they may be for you. But they're so delicious!!

(13,926 posts)Kinda sorta reminds me of Alton Browns Sardine toast with out the sardines.
I do a variation with toasting with olive oil instead of butter. Sometimes instead of lemon/lime juice I use middle eastern sumac for the lemony flavor so no need for the mustard to emulsify the oil acid mix. If avocados are too expensive I use commercial guacamole. Sometimes I use Columbian arepas instead of bread or tortillas. They are like corn based english muffins to me..Living in So Fla it's easy to find arepa flour and tortilla flour. Avocado prices go up and down in price around here . Sometimes $1 each and sometimes WAY more. Good stuff though..
