What's for Dinner, Mon., June 26, 2017

I'm making another stuffed pepper tonight, as the one I made a few days ago was really good. It's a stuffed red pepper topped with lots of cheese and rice-vegetable filling.

I have to work at the community garden tonight, so I plan on picking some kale and making what's called a cheesy kale crustless bake. That's if I'm not too exhausted when I get home. We are putting in some elevated raised beds for elderly members of the community. This way they don't have to lean over to garden and they can garden standing up. This might involve lifting some very heavy bags of compost and soil, so if I survive that, the kale bake will also be on the menu.

I love being able to cook things from the garden just about every meal!

I have pork loin in a Vindaloo sauce, marinading for tomorrow. First time I will have tried this recipe.

...for me. Yesterday, I made lentil soup for the guy, which he'll be enjoying with naan and a green salad. Recipe says it's better the second day, so I made it in the evening.
The B & L is a celebration for me, as I reached a small milestone in my continuing "Escape from Cancer-Treatment Island." I had developed a problem area, and after extensive treatments, I'm finally bandage-free. It's been months, including a time where I had to wear an Ace around my chest. Freedom, baby!
I've also found that "My Girls" cream, especially for radiation-damaged skin, works wonders on cooking burns.

This is a big victory to celebrate. I lost my darling daughter this year to cancer after two years of treatments. Her favorite Sunday breakfast was bagel and lox so I have them every week.

Still on soft food, I cheated yesterday and sure regretted it.

Deviled eggs mashed up with a little mayo
Mashed sweet potatoes
Shredded fruit

Spice tea and dunked sugar cookie

Chocolate, which hopefully will melt in my mouth.

You're doing really well within your limitations. I especially love the devilled eggs idea, kind-of like chunky egg salad. And never forget the chocolate!

TJ made the deviled eggs and there they were, sitting in the refrigerator. I went mmm, grabbed them and smashed them up. It was good. Earlier I was putting potato chip pieces in my mouth and letting them soften. It was great until I got in a hurry.

Edit to add: I quit planning meals and anything I can smash up or moisten until it falls apart is fair game. I'm back to the surgeon tomorrow and I'm hopeful that he is done with any cutting. A gradual return to regular food is soon I hope.

I don't garden anymore because I can't lean over. Raised beds are great! The cheesy kale crustless bake sounds great too; is there a recipe?

Doesn't it just look so yummy?

Crustless Cheesy Kale Pie

1 tablespoon extra virgin olive oil
1 medium onion, diced
1 pound cooked kale, squeezed dry and chopped
4 eggs, lightly beaten
4 ounces shredded mozzarella cheese
4 ounces feta cheese, crumbled
4 ounces creamy goat cheese
salt and pepper, to taste
ground nutmeg, to taste
Instructions
Heat oil in a skillet and cook onion until just barely soft, about 5 minutes. Combine onion and kale and stir in beaten eggs. Add cheeses and stir, then season with salt, pepper, and nutmeg and stir once more time.
Pour into a greased 8 x 8 inch glass baking dish, cover with foil, and bake at 375 degrees until set, about 45 minutes. Let cool slightly before slicing and serving.
Notes
Kale is quite a bitter green. You can remove some of the bitterness by boiling it slightly longer before squeezing dry and chopping, but if you prefer a more mild green, use spinach or Swiss chard in its place.
