That was a frequent meal when I had a full garden going. We will still probably buy the zukes and eggplant because that is one of our favorite summer meals. I am growing tomatoes, basil and green peppers in my downsized garden. With my full garden, I also had yellow squash to add an additional color to a really pretty dish. And if you are a carnivore, lay slices of bacon over the top before you bake it. I would turn the bacon slices over half way through baking.
