What's for Dinner, Fri., Aug. 18, 2017

Lasagna, made with yellow zucchini from the garden. Will have bolognese sauce, mozzarella, and pecorino/romano, along with herbs like basil and oregano.

For dessert, I made up this huge fruit salad using blackberries, red grapes, watermelon, and a small amount of cantalope.

Pork shreds with cuke shreds and cellophane noodles --- Salad

also w/garlic, ginger, Sichuan chili oil and roasted Sichuan peppercorns

Dan Dan Mian is-- umm.. well.. dan dan noodles--

--wheat noodles with ground pork, homemade sichuan chilli oil sauce and sesame paste,, other good stuff..

I do a few variations- one 'straight up, so to speak.
One with shallots and sesame oil-

How do you do it?

I also make my own La Jiao Jiang-- Hot chili sauce, ---and other stuff.. but buy Pixian Douban, douchi, etc...

I use green onions and bok choy to break up the color and add some veggies. I can't use peanut butter (as in some recipes) because I have the allergy. But sesame paste works just fine! I'm still working on getting the ground pork to that crunchy texture. Next time I'll drain the fat earlier during cooking then recook for crunchy goodness.

Website and FB. Fantastic resource and great stories about a woman from Nashville and her adopted Chinese daughter.. And then there is Fuchsia Dunlop, Mrs Chiang, on and on.. :&gt )

I was in Chengdu just once, too many years ago. ALMOST went back this summer for a 'foodie tour.'

Are you anywhere near NYC, LA, SF Houston?

If I make Lasagne for us, I also make it with zucchini. Husband doesn't care for eggplant. He don't know what good is! 🙄

Can't serve it to Hubby however.
We're having Cajun Chicken Salad: cutlets cooked in the grill pan and seasoned with Cajun spices, sliced and tossed with red and green peppers and red onions in a dressing made with olive oil, tarragon vinegar and mustard.
I splurged on some King crab and will be treating myself to some yummy crab salad this weekend!

pan fried. With seasoned potato wedges (in the oven), and homemade cole slaw.

(Nothing worked out today regarding dinner. I was going to make a Cuba-themed fish dinner, but as I shopped today, the veggies/fruit seemed either not ripe enough or too ripe. Anyway, this is my 5th menu for the whole fish. )

Good ol' standby...

Oy.

Edit: AND..... I forgot the chicken livers on my list! Doh!!

Missed eating enough today. I am ravenous. Grabbing whatever I can find.

Leftover piece of chicken with BBQ sauce was found and devoured.
Now is leftover salad from yesterday.
Wow mashed potatoes and Lima beans (if I have room)
