What's for Dinner, Tues., Aug. 22, 2017

It is really hot here, so we are opting for a cold dinner. We even have a heat advisory.

Cold smoked salmon. Sauce is Japanese mayonnaise combined with a little raspberry jalapeno jelly. The salmon has a little of the jelly on the top, for decoration and also because it is g-o-o-d.

Salad is thinly sliced fennel (used the mandolin on this). A few other vegetables are mixed in and on top, parmesan crisps. I really like this type of salad because it has a cooling effect.

Rainforest crackers and also cranberry-pecan bread, sliced in quarters.

For dessert, pistachio ice cream sandwiches using stroop waffles.

Fresh green beans, corn bread--no sugar--, and fried potatoes. Bad storms here so the heat is not so bad this evening

I had a whole chicken so marinated the parts except one breast saved for soup. Made egg noodles from scratch and bone broth with the neck and the back, too. Used fresh thyme and sage from the herb garden. Yummy soup.

Chicken parts are being marinated in tequila, lime juice, garlic and mesquite seasoning - for the grill tomorrow.
Drunken chicken ! Give it a try on wings, too. Awesome! Tailgate food for reals!

Made chocolate chunk cookies for dessert.
