What's for Dinner, Sun., Sept. 10, 2017

The Resident Gourmand is in Arizona at a food show, so I’m on my own and am going very casual with dining tonight.

Tossed salad using greens from my garden. I’m also going to use roasted cherry tomatoes in the salad; sweet onion dressing.

Meatball sandwich with tomato sauce on onion roll. Dill pickle-flavor potato chips.

For dessert, cantalope and mint mixed with sweetened condensed milk.

Hubby had a mini chicken pot pie (homemade), and I defrosted some shrimp and had a shrimp salad plate.
Now there's more room to store ice in case we lose power (we're in Brevard County, Cocoa area).

It was tasty and satisfying, but the rice had turned to mush.

The next big batch will have some frozen under cooked in the hopes the rice will be better when thawed.
