You're welcome. Now I have to find the 'right' sausage. Haven't found my favorite for years, so haven't made my/our favorite sausage w peppers dinner for years.

Almost identical process, though, essentially same ingredients and it is a delightful dish.

I call it "sausage bake" and my wife loves it.

Only we add a can of crushed tomatoes to the whole thing, and call it "Italian skillet", usually done in a cast iron skillet.

Darn - now I'm hungry!

Just 2 of us, and don't want to think about eating any of the birds around my neighborhood, so I'll give Thanks for a good recipe for good Italian sausage!

Ingredients: 1 lb. hot Italian sausage (although I prefer sweet), 1/2 c. + 1 Tbsp. olive oil, 1 lb. baby red skinned potatoes (I used Yukon Golds) cut into 1/4" slices, 1 lb. sweet mini peppers with seeds removed and cut into 1" strips (I just cut red, yellow and green peppers into strips), 1 medium red onion cut into thin slices, 6-8 garlic cloves cut in half, salt & pepper.

Brown sausages in 1 Tbsp. oil and slice in half. Heat oven to 450. In a mixing bowl combine oil, potatoes, peppers, onion and garlic. Season with salt and pepper. Spread the mixture in a large roasting pan, top with sausage and roast for 30 - 40 minutes turning halfway through. (It took about 5 minutes more when I made it.)

I doubt I used an entire half cut of olive oil. I just drizzled until it looked like enough. We liked this so much I'm going to make it again over the weekend!
