What's for Dinner, Thurs., Jan. 4, 2017

A big pot of sausage tortellini and Italian sausage. Polenta to go with. Yesterday the RG made stock, which he used to pour over this dish. We have two fresh baguettes from the bakery and other various breads to go with, like stuffed breads using kale or leeks.

Made a (rather large) batch of red. Choose a chili pepper, it's in there! Searching for the antacid just in case...

I made a gluten free chocolate cake for dessert...first 'scratch' cake I have tried. Looks good. It was an odd cake and used mayonnaise instead of oil.

had. I sauteed spring onions lightly, fresh garlic, fresh ginger, ( I used both to taste) (but you can use the spice too...I have before) some coriander seasoning, red thai curry and brown sugar a couple of tablespoons..you could use coconut sugar also...it didn't taste sweet just emphasized the other ingredients...I used both fish sauce and soy sauce but you could use one or the other depending what you have, two cans of regular coconut milk...I added the curry until it tasted good...start with two tbsp...also chili paste is really good. I didn't have any so I used some red pepper. and in the end I used about a half a cup of lime juice: give or take and added cilantro (you either love cilantro or you don't so it is optional). The soup came out really good. You could use a rotisserie chicken too. I used two big chicken breast for the two cans of coconut milk...cooked it and shredded it. Add vegies you like...I added shredded carrots and mushrooms because that is what I had. If you used a can of coconut milk use two cups of water (I added all natural chicken bouillon for flavor...could use vegie too) . If you use two cans of the milk than use four cups of waters or chicken/vegie bouillon. I did use parts of both recipes. some folks serve this over rice noodles or add noodles, That is good too. I used cilantro at the end in the bowl.

Instant OD is my problem with most chocolate cakes I run into (and back away fast from).

I'm pretty much like you with baking but recently tried a Julia Turschen recipe called (unfortunately without explanation) "Happy Wife, Happy Life Cake." Super fast and easy, a "classic dump cake," not cloyingly sweet, and ages well in the fridge. No mayo, but the frosting she offers is made with sour cream. Both keepers for me, but I'm going to look for a real OD-bomb chocolate frosting recipe for when I want to make it for others.

What made me think of it is a site that said it's easy to convert it to no-gluten.

I am going to make it...Thanks for the recipe. The cake with the mayo was great! Here is the link she has great menus. The soup was really good. I didn't spice it too much for my sis in law...but I added spice to my bowl and cilantro.

Again thanks so much...the gluten has been tough...but I am adjusting. The worst is the dairy! I use Lactaid milk and have switched to a vegan 'butter' ...I love real butter! But last time I ate it...I was really.

without dieting since I stopped eating wheat and dairy...I feel so much better. I will let you know how it turns out...maybe take a picture. Thanks again.
