Country Pea Salad

Lamb shanks, warmed up from the other night.

Fruit salad for dessert: chopped cantalope, red grapes, blueberries, chopped mint and basil.

The Country Pea Salad is a recipe from my childhood. Thank heavens mom thought to give me the cookbook where she got a lot of her recipes. I used fresh peas, which are starting to come in the stores here (!? like it's spring??), and it is mixed with a little onion and celery, hard boiled egg, with mayo for the dressing. Toasted, chopped pecans sprinkled over the top and served over lettuce leaves.

French toast, sausage and grapefruit. We get maple syrup from the oldest continuously run business in Iowa - yum!

Chinese tonight...the restaurant fixes my stuff without gluten. General Tso's, Sesame beef and shrimp with peapods...also fried rice with pork...really good...apple cider to wash it all down.
