It's a cold, rainy day, so I made a pot of soup and it hit the spot. I found this recipe for Cabbage Roll Soup on Pinterest and thought it sounded good. I was right. Luckily, I have a full kitchen at work and the boss has no problem with me using it when I have some slack time.

I tweaked it a little bit, although I think it would be great just as it's written, but I rarely fix anything just as it's written. For one thing, I added more beef broth because I wanted it to be a little "soupier". I altered some of the seasonings, as well, just to my taste. I'm putting some up in the freezer and sharing some with my boss. I hope the rice doesn't turn to mush, but if it does it won't hurt the taste.

(15,805 posts)Thanks, Arkansas Granny! I wish I had a big cabbage so I could make it now, but it will have to wait for a shopping trip. I'd spice it up a bit with some crushed red pepper flakes and some chopped poblanos, then serve it with a dollop of sour cream. Makes my mouth water!

(58,785 posts)for spring. Maybe be glad of them and their relative normalcy.
We're in a summerish spring here, but everyone's looking out for another arctic blast to come kill all the new growth before the heat really starts. This is February in the 21st century.
Guest still here, so spaghetti tonight because he likes it, and I'm just glad there is something he does. I feel like I'm back to cooking from a little rotation for a picky preschooler.
