What's for Dinner, Mon., Apr. 30, 2018

I'm making a quick slowcooker lasagna before I leave for a gardening class. It should be easy because the RG made up delicious tomato sauce with sausage for me to use.

This should be easy, since it's a lasagna for one. From reading about it on the internet, it's just layering sauce, noodles, ricotta, mozzarella, vegetables, etc. I'm just going to put it on low and hope for the best when I get back later.

BTW, meant to mention the interesting dinner we had at the Portuguese restaurant the other night. They had a new tapas menu, so we ordered:

empanadas
chorizos
tripe, bean and garbanzos with chorizo
piquello peppers stuffed with avocado sauce
shrimp in garlic sauce

Needless to say, I didn't have any tripe, but that dish was one of the best flavor combos.

Red curry thai style noodles& baked crispy tofu & veggies. I used angel hair pasta broken in half for the noodles, this would work over rice as well.
Cold decaf tea.

chicken w/ a tomato sauce w/ green bell peppers. tried to replicate it. last year i figured it out, but made it into a better pasta sauce. tried to do the airplane. tomato paste & my frozen peppers(farmer's market haul from last year. last 2 years). had to fix last nights trial. bit of sugar, minced garlic, some mild herbs. celery seed. heated in a skillet, not baked. used my baked chicken from sun.
