What's for Dinner, Wed., June 6, 2018

Salmon and cucumber salad. It has red and green bell pepper, celery, feta cheese, scallions, and lemon juice. The dressing is creamy, using low-fat sour cream with Dijon and dill. This is served over garden greens.

I think the RG is stopping at a specialty food store on the way home from LI for the other items to go with this meal. I may be back with an update.

On edit: main course is chicken topped with some type of Asian twist. He wouldn’t tell me by phone what it was. Said if he did he’d have to kill me. Some people take cooking way too seriously!

Cold decaf tea. Veggies used onion, carrots, green & red sweet peppers. There is enough leftovers for lunch, always a nice thing.
Cleaning out the fridge of vegs before next grocery trip.

with sauerkraut and deviled egg potato salad. I love being able to cook outside on the grill in the summer. Beats hanging out in a hot kitchen hands down!

4. A grilled chicken dish I learned from my Greek neighbors

It's a simple dish. Cut a boneless chicken breast into bite-sized pieces and marinate them in lemon, olive oil and dill. After the chicken has sat for an hour or so, make kabobs with the chicken adding onions and green peppers. Grill the kabobs.

Meanwhile, peel a cucumber and dice it. Add it to a container-full of yogurt, (I use Fage®). Mix in some dill.

Don't forget to keep turning the kabobs. Take the pita bread and fry them in olive oil until they're toasted. I keep them warm in the toaster oven until the kabobs are ready.

Each plate gets a pita with the yogurt sauce, chopped lettuce, small tomato slices and the kabobs. Drizzle a bit of tahini sauce on top and sprinkle a shot of your favorite hot sauce over it all.

Really, it's kind of like street food but my fiancee loves it. In this house, when the queen is happy, there is peace in the kingdom!
