Sat outside on my front patio area and pulled some recipes from a cookbook. I am only making a few vegetable dishes tonight. They are:
--baby bok choy with black vinegar
--Breaded zucchini rounds. In the breading is grated parmesan and herbs, salt and pepper.
Later, if I'm still hungry, I'll make a vegetable sandwich with roasted red pepper, mozzarella, and scallion.
p.s. here's where I do my menu planning when it's nice out:

My digestion has been off and I've been eating simpler things that appeal to me; tonight it's homemade chicken salad on a seeded Kaiser.

Bok choy's a favorite, had it last week with the addition of, like Irisblue, a little sesame oil.
I used the last of it Saturday in a soup of green vegetables in clear broth. The veggies came out nice cooked mostly separately until just barely tender, but the broth needs work. Tasted nice, but I'm in love with the idea so need a broth to be in love with also.
