A quinoa and vegetable salad to take to work, but when I get home around 9:30, the RG said he was going to prepare something simple and light.

(21,916 posts)We are reaping the bounty of our vegetable garden and we have so many goodies to choose from!
Our salad is a combination of greens including Romaine, Red Romaine, red leaf, green leaf and Bibb lettuces combined with cilantro, baby tomatoes and red onion. This will be topped with olive oil, balsamic vinegar and shaved Romano cheese.
The basil plants are growing out of control so we'll have homemade pesto on rigatoni along with garlic bread.
One of our favorite wine shops recently closed and we bought a couple of cases of Ruffino Chianti at cost so we'll open that up.
Don't work too hard and eat well!

(17,376 posts)Cottage cheese with bell pepper, cucumber, and radish slices and a couple of olives for the taste.
Fruit salad - blueberries, cherries, banana and whatever else I can find.
Tea and a few cookies later.

FLFC has a mini cheese burger waiting in the refrigerator. If he's good I'll share some cottage cheese. He is still asleep as I post.

Fresh corn on the cob.
Chocolate and nuts for dessert.
Usually do meatless Monday but I got this out Saturday for Sunday and didnt cook it. Floated the river instead and opted for chili dogs. Why is ANY food so good after a long day outdoors?
