What's for Dinner, Wed., July 18, 2018

Appetizer: cold vegetable plate with an eggplant "steak" in the middle, surrounded by a cucumber-radish stack on one side and caprese salad with both red and yellow tomatoes on the other side. The eggplant was rubbed with basil flowers and topped with herbs de provence and olive oil, then with aged cows milk cheese, which was then melted.

Main course: chicken breasts done in a cast iron skillet and which have the most beautiful golden glaze. On top is a vegetable mixture of zucchini and tomato, which, I think, due to being cooked in the cast iron skillet, is very concentrated.

We are each having a watermelon juice mixture from WF. This comes from their juice bar and are known as "cold-pressed raw juices."

Dessert: cold decaf coffee and dark chocolate. Tangerine slices.

I've been having a digestive issue for several months, and pizza is what I've been dying for. While the doctor is reviewing my test results, he encouraged me not to limit my diet, so tonight we feast!
