What's for Dinner, Sat., July 21, 2018

Pepper chips. This is my invention to have a low-carb way of having "crackers and cheese." I slice up green and red peppers into squares and spread them with soft cheese, in this case jalapeno flavored. Sprinkle a few chopped walnuts on top.

Grilled baby romaine. Wrapped in prosciutto slice and it has cow's milk cheese in it which of course is melted due to the grill.

Salad made with mango, cucumber, red onion, avocado, and radish. Has a slightly sweet dressing.

Steak, cut into cubes and in BBQ-type sauce.

Dessert: red grapes and watermelon.

Stirred a memory of lunches my mother packed for us if we were going to be out and about on our bikes. We would go to Jamestown Island or cycle the Colonial Parkway to Yorktown. A wedge of a quarter of a bell pepper from the garden with cream cheese and nuts (pecan or walnut) pressed in. Sometimes with huckleberries or blueberries from the bushes near the garden mixed in the cheese.

There were Martha Stewart Living magazines in the waiting room when I had my car worked on this week, so I worked on my menu.

We also had skewers of tomato and onion grilled, and corn on the cob, because July and Iowa.

Dessert is an experiment. I made Summer Berry Buckle https://cooking.nytimes.com/recipes/1017644-summer-berry-buckle
but with Bing cherries instead of berries. Orange zest instead of lemon, and added about a tablespoon of amaretto. It just came out of the oven and smells pretty good but it'll have to cool before we try it.

For him. I *think* I made it the traditional way, spices, buttermilk, cornmeal. Corn bread, dirty rice, and black eyed peas. Meanwhile, I had bagel and lox (Aldi's lox is pretty good - and cheap)! Heavenly.
