My son the vegan is home from college. We eat a lot of vegetarian so it's not been too hard to modify dishes. The other day we fixed a mock stew beef over rice with gravy and it was delicious! I was skeptical about the gravy (tried one last Thanksgiving that was ok) but this stuff was good. The only thing I would change is the vegetable broth. We used the Better Than Bullion vegetable broth to save time and I think it added salt where not needed. But the thickness was spot on. It was creamy and smooth so if you like lumps, it may not be for you.
The recipes are from The Buddhist Chef. We used the Portobello Steak recipe but I had baby portobellos so they cooked like beef stew.

Ingredients
2 T vegan margarine
1/4 c all-purpose flour
3 c vegetable broth
2 T miso
1 t onion powder
2 T soy sauce (I used low sodium)
1 T maple syrup
1/4 c nutritional yeast (don't use regular!)
black pepper to taste
Directions
1 - In a medium saucepan, melt margarine over medium heat. Whisk in flour and cook for 2 minutes.
2 - Add broth and bring to a boil, whisking constantly.
3 - Stir in remaining ingredients, lower heat and simmer for a few minutes until thickened.

(24,324 posts)My sister is a long time vegan. I decided to 'eat vegan' for about a year.
I have eaten in some stunning vegan restaurants in Long Beach and NYC and even in Chengdu..in a Buddhist temple restaurant.
I now eat mostly vegetables but also some meat... not a lot.
Anyway, my question.. WHY are some/many ?? vegans, or vegetarians for that matter, often looking to make "meat" dishes, or dishes that remind them of meat dishes? Why not just eat. VEGETABLES?

(16,330 posts)And I wonder the same thing. I have been accused of calling the "meat substitutes" some not so kind names (I'm working on that). But this kid needs protein. Already too thin before he became a vegan, he can't eat only vegetables or he'll die. He doesn't eat eggs or dairy so that limits a lot. And he is a late vegan so he does love the taste and smell of meat. I think if you were always one, you might not miss the taste.
Also, when he was on his own, he tended to cook and eat what was fast and cheap and therefore didn't get a lot of variety. I'm trying to change that. With this meal, we had roasted carrots with thyme, and sauteed spinach. He loves vegetables so that's not an issue. But you can get too much fiber and not enough protein with just vegetables alone. He drinks protein shakes to supplement and I'm making nuts, beans and peanut butter available.
The Stuffed Peppers recipe looks good. We are trying to eat less meat, too, but I still want a meal that feels hearty and offers flavor.
Gonna look to other vegans for help here!

The Thai place near Long beach was dynamite. They even had a began "pig intestine" that could almost have fooled me ! :> )
When I did my vegan year, as a then former meat eater, I too craved something resembling meat. :> )

(34,170 posts)It's vegan and gluten free and it's the only thing I use for any soup base--or any recipe calling for broth. It adds a subtle, rich flavor to recipes that I've never found anywhere else. They also have onion and brown seasonings, but nothing beats the golden. You can get it at some stores, but I have to get mine online. I know Amazon & other places carry it. Here's a link to ingredients:
