What's for Dinner, Fri., Aug. 10, 2018

I made sesame noodles, which is not on a low-carb diet. The RG left the country for a week on business, and I was astonished when I got a phone call from Buenos Aires from him just a short time ago, checking on me to be sure I was sticking to our low-carb diet. Which of course I was not. Hmm. So I changed the subject. Anyway, that's what I made for dinner: sesame noodles. With cucumber and chopped peanuts over them.

My fiancee's mother and sister are visiting us at the mountain house. Here's tonight's menu.

Sliced homegrown tomatoes with red onion and mozzarella cheese drizzled with olive oil and balsamic vinegar and topped with fresh basil leaves.

Salmon filets wrapped around a stuffing of bread crumbs and tiny shrimp. These will be grilled and saturated with lemon juice. Served with homegrown salad and brown rice.

For desert, we have a fresh pecan pie and vanilla ice cream.
