What's for Dinner, Wed., Sept. 26, 2018

It's a busy day and no time to shop, so I've put together this omelette idea with items I already have: Spinach and red onion in the omelette. Filling will be feta cheese and crumbled turkey bacon. Sprinkled over the top: chopped tomato, maybe some cilantro.

On the side, romaine salad with raw vegetables.

breakfast for supper ...
scrabbled eggs .. hash browns ... 2 sausage links and 4 strips of bacon.

wife has scrabbled eggs and 2 strips of bacon ...
I give her half of the hash browns .. and 1 strip of bacon
I offer one of the sausage links cuz I think it is a rule
u gotta have sausage when u have pancakes and syrup...

Baked potatoes (the guys aren't big on side dishes) and a lovely 2 year old Cote du Rhone.

I don't cook on weeknights, my son or my husband do the cooking, since I'm working. I make the week's menu, keeping in mind their tastes and skill level. So, the trout is easy and tasty, if a little pricey.

I'm getting over a cough, I needed something easy.
I already had frozen precooked ground beef & onion packets, thawed one, mixed it with a pasta sauce, added powdered & minced garlic& italian seasonings. 2 T on spread on half an English muffin, put spinach, & mushrooms under mozzarella & provolone, melted that on top.

The meat was left from a bbq lucheon today. I added toasted french garlic bread, a few pepperoncinis and sliced pear.
