Are you baking anything today? I'm baking my favorite banana bread recipe

Just in time for Halloween week. I always bake an oven full when I do. Then one loaf goes to my son and his family, one loaf goes to my daughter and her family, one loaf goes to work for my friends to enjoy, and I keep the smallest loaf to have for breakfast with a cup of tea in the mornings. It keeps best wrapped in alum. foil and place in a large zip lock bag in the refrigerator. Here's the recipe:

Banana Bread

2 ¼ cups Whole Wheat Flour 6 eggs
3 cups white flour 1 ½ Tbs vanilla
2 Tbs baking powder 1 ½ cup veg oil
¾ tsp baking soda 10 – 12 ripe bananas
¾ tsp salt
3 cups sugar
¾ cup chopped nuts (walnuts or pecans)
¾ cup dried cranberries

Preheat oven to 350*F. Butter and flour 4 loaf pans. Stir dry ingredients together in large bowl. Wisk together eggs and vanilla in medium bowl. Mash peeled bananas in large bowl and wisk in veg oil. Make a well in the dry ingredients and stir in the egg and banana mixtures. Mix well. Pour batter into pans and bake for 55 – 65 minutes. Loaves are done when a chop stick is inserted into the middle of a loaf and comes out clean. Cool on a rack for 10 minutes before removing from pan. Keeps best in the refrigerator.

The recipe may be cut in half for two loaves. Enjoy!

5. Have you ever tried roasting your bananas before you mash them.

I put mine on a baking sheet in a 350 oven for about 15-20 minutes or until the skins turn brown, cool and then mash them. It really enhances the flavor.

I've never tried putting cranberries in banana bread. I'll have to give that a try.

Haven't done it in a while, but used to roast them then add a little sugar and dark rum, mash then up and use for cake filling on plain yellow layer cake, spread whipped cream on cake. Just bought a set of thin cake pans to make a 4 layer cake. The roasted banana filling would be good in a 4 layer cake. Maybe my next baking project.

Midweek last week and plowed through the rest of them yesterday. Didn’t need to bake anything new! Lol

I stock up on choc chips and other candy making ingredients thru Oct and Nov (something every week spreads the cost out) and then bake every weekend in Dec.
