I'm making fluffy butternut squash pancakes to go with the RG's escarole-tomato-macaroni soup. It's a Mollie Katzen recipe, which as you know is my fave.
Dessert will be a ripe, chilled pear with Brie. Also toasted almonds.

(2,302 posts)I grill 'til almost burnt, and top them with my own topping of sauteed onions with low-carb ketchup and Worcestershire sauce...and melted Cheddar. Low-carb and delicious way to serve my Nathan's'.

(17,485 posts)I'm having a roast beef sandwich with cucumber, onion, spinach and a little mayo.
I haven't been doing much cooking. My back is iffy and our schedules have been changing.
I'm sure that sandwich will not be enough. There are apples, oranges and several kinds of berries all begging to be eaten with the cottage cheese TJ reminded me I bought and forgot. Also a mug of tea and cookies later may be in the cards.
FLFC is asleep at the moment. He will be very happy with a warmed up (no bun, please!) mini-cheese burger.
