from a Bisquick cookbook. Until my food processor croaked, I would make regular pie crust.
This one is easier and tasty.

2 cups shredded cheddar
1 cup bisquick
1/4 cup milk
1/4 tsp. thyme (or any another seasoning you might like)
2 eggs

Mix it all up, pour over the chicken mixture
Bake at 375 for 35 - 40 min til crust is golden brown.


I use boneless chicken breasts, frozen mixed veggies and a jar of chicken gravy. I cut up the chicken, cook it up in wok oil with some pepper. Then I add the gravy and mostly defrosted veggies. Cook and fix up the flavor any way you like. Today i put in some cajun spice blend. Dump this into 9" pie pan, Shmear dough over the top.

Easy and good.

I might try it tomorrow and sub the chicken with the rest of my leftover tri-tip. I don't have any jarred gravy but I can mix some up with bullion, cornstarch, etc.

I have made it with left over pot roast and even those thin steaks you use to make Philly cheese steak sandwiches.

Next time I want to try one with bbq sauce chicken or pork and corn and black beans.

I keep a jar of chicken and beef gravy in the cupboard for those 'uh oh' situations.

We may have to move just to get groceries. I am almost always able to get a ride within a few days, but no luck right now.

I am making bread today and have some canned soup, so that will be good.

Hopefully to market tomorrow.

Roasted asparagus w/sesame oil and garlic
Pork ribs (boneless) with sesame ginger sauce
Flounder, basted with plum sauce
Tofu with orange sauce
Corn scallion pancakes
Baby arugula with shaved parmesan, fennel, and toasted pine nuts

I'm giving some of this to a friend who has an ankle injury and can't walk. Meanwhile, I munch on it.

I had some time today, since it's spring break at the university where I teach. Decided to spend much of it cooking.

I grilled that in salt-free goats butter. Simple but yum.

tossed a pack of sardines in for a bit of extra richness. can't decide if i'm going to have it with polenta or pasta, but we'll have salad and bread with it, too.

We call them hoagies. The place I get them from makes the best cold cut hoagies in this area. They did not disappoint.
