Bison burger topped with a slice of mortadella. The RG made a sauce for it, too. No hamburger roll, as we, too, are returning to low-carb dining after the new year.
Tossed salad of arugula and spinach greens with chopped vegetables--the usual, meaning carrot, cucumber, cherry tomatoes, etc. Homemade salad dressing.
A plate of broccoli rabe cooked with garlic and hot pepper flakes.
In addition, a beautiful plate of grilled vegetables: red and yellow peppers, zucchini, eggplant, and broccoli.
The RG bought two desserts at Whole Foods, but I'm not having any. They are carrot cake and almond cake.

(35,730 posts)This is for Irisblue, but those of you who read the suggestion from her on NY's Eve might be interested. Irisblue suggested that I should add mushrooms to the baby bok choy I was making for my Chinese food that I served on New Year's Eve. It was too late for her suggestion, as it was already made but I wanted to make more, so I bought more bok choy and the mushrooms.
I asked the RG about how I should make it. He had to think about it, but came up with a method for me. However, I thought it was too complicated so I said I wasn't going to do it. Here's what it is:
Garlic, olive oil, and mushrooms in the pan. Sautee them and then add the yolk of an egg, reserving the white for something else. Swirl the beaten egg yolk into the mushrooms. The baby bok choy should should be cut thin--almost like slicing on the mandoline but at the thicker setting. Add the baby bok choy to the mushrooms and cook until done.
I didn't want to make it because I was concerned about the egg yolk turning into a scrambled egg, so he made the dish and showed me how. It actually is very delicious--great way to combine mushrooms and baby bok choy! The way he did it, there was no "scrambled egg" effect.

I grabbed some nicely marbled T-Bone steaks at the little store's butcher a few days ago.
I've also cleaned and prepared some turnip greens to simmer.
There is an eggplant sitting on the counter and I'm unsure of its intended preparation.
I am awaiting TJ and FLFC waking up to decide the full menu and find out about that eggplant. She worked the last two nights and told me to wake her for dinner, but I think she needs the sleep. I'm going to forget to do that and do dinner prep, but not cook yet.
Hubby gets his on a roll, and mine was going to top a salad...btu now I realize I made a side salad that's marinating in Italian dressing. I'll just top my burger with bacon and blue cheese!

I have decafe cold brew coffee, I'll warm that, and some milk to make a sort of Cafr Au Lait with the movie later tonight.
