What's for Dinner, Sat., Jan. 12, 2019

Starting off with club crackers and cheese (provolone and pepper jack) with chopped basil and cherry tomato halves. Glass of red wine.

Tossed salad (butter lettuce) with snow peas, toasted walnuts, and sliced Asian pear.

Warming up in the oven is chicken francese, mashed potatoes, and broccoli.

Dessert: apple pie with cheddar cheese.

we'll be using our new Christmas gift, a vegetable spiralizer, to make "pasta" spirals out of zucchini and yellow squash with a bit of leftover roast chicken and some sort of sauce, maybe a pesto sauce, baked pears and fresh oranges off our trees.

2. Pantry Soup

Made from stuff you can keep around the house in the pantry or freezer

ZERO WW points for those who are interested.

1 can Kirkland canned chicken breast
1 can chicken broth
1 can Ro-Tel
1 can rinsed and drained black beans
seasonings of your choice
and a cup of frozen corn.

Put everything but the corn in a saucepan and simmer until the flavors blend. Add the corn and serve as soon as the corn is done. If I have some, I will put leftover frozen rice in the soup too. That raises the point value but not very much.

This makes 4 generous servings.

FLFC had some beef after eating some of the dog food from his bag. I'm thinking he was humoring me. He is sound asleep with TJ while I sip an unusual evening cup of coffee and contemplate the snow glistening in the street lights as it falls.

the dog sleeping part and the snow glistening in the street light. Sometimes life is so good.

And speaking of eating straight from the bag, I have one of those. It's a little black kitty cat, tiny as can be. Probably about 2.5 lbs. She is the victim of a tornado and I am fostering her until her hooman rebuilds the house, which is going to take until later this year. The hooman gave me a pic of her breaking into a bag of dry food, and she has only perfected her skills while she stays here. Sometimes in the morning I go into the room where the dry food is stored and she has had 3 or 4 bags strewn across the floor, which means she not only retrieved them from on high, but opened them, too. Probably had some as well, without making a mess. Such handiwork! Always gives me a laugh.

with parmesan my son thoughtfully grated for us. Grapefruit. I did other work around the house today and also made a gallon of vegetable stock from scraps, in my Instant Pot.

I made a macaroni and cheese (gluten free ) . It turned out great we had a vegie tray and homemade ranch. I buy the powdered buttermilk and keep it in the refrigerator...works great. And for dessert we had homemade apple cake with whipped cream (made it myself). Hubs worked today so I wanted a special dinner.

Biscuits & gravy, bacon, eggs (maybe scrambled with zuchini, cheese, onion)

fruit smoothies : mango strawberry & pineapple

From the Atkins website and surprisingly delicious. Split chicken breasts marinated in olive oil, mayonnaise, lemon juice, garlic, scallion, and tarragon, and then cooked in my grill pan. Roasted Brussels sprouts and Hubby had rice with.
