What's for Dinner, Wed., Jan. 31, 2019

Is there anything better than the aroma of roasted chicken? The RG roasted one earlier in the day and that's what we're having for dinner. He already deboned it and made chicken stock, too!

I'm making a side dish of roasted pine nuts, raisins and Swiss chard.

As a salad, the RG must have been missing summer because he bought heirloom tomatoes, Buffalo mozzarella, and fresh basil. We're having that as a salad. Caprese.

Last night I made dill cottage cheese muffins. I thought it was a failure because I couldn't get them out of the muffin liners. Today, however, they came out just fine! We will have those to go with the meal tonight, too.

Carrot cake for dessert. We're splitting a slice.

I used the veggies & meat I had on hand.


Changes I made, , ground turkey, no bell pepper, I used the poblano I had. The orange-yellow fleshed sweets would work better then the pale white fleshed sweet I had, it kinda melted away. The lime juice was in a small squirt bottle.

I had garlic naan to mop the bowl. I LOVED the spice combo, just enough heat for me. This I'll keep on rotation.

Squash soup and french bread. we've been snowbound/housebound since
Tuesday, getting rid of a lot of food, clearing out freezer. chocolate chip cookies and ice cream (I know, I know) for dessert.

Got it on sale. Stovetop stuffing and gravy on the side. Veggie is edamame salad. Enough leftovers for a week.

All these meals sound wonderful!

We do a lot of whole chickens in the crockpot, at least one a week. It's so easy and it's nice to have not only chicken and gravy, but also plenty of extra chicken for quick quesadillas, sandwiches, and stirfry.

We had fried rice. It's been my go to fridge-cleaner-outer lately: whatever protein and veggies we have hanging around, tossed in with Jasmine rice that I "fry" up in little veg and sesame oil whilst prepping the veggies. Tonight's version had salmon, green beans, carrots, onion, garlic, and a little ginger. And the egg, of course. Some soy sauce and a nice squeeze of Sriracha.

Almost ready for dessert: a Dreamcicle.
OK, probably 2 Dreamcicles.
I love those suckers, even if it is 9° outside.
