(38,562 posts)and a fresh salad of romaine, carrots, onions, celery, yellow bell pepper, grape tomatoes, black olives and cubed ham. Dressed w/ the homemade salad dressing I made last night (red wine vinegar, olive oil, garlic, onion powder, Italian seasoning, Dijon mustard, and S&P).
No dessert planned... but Top Chef is on tonight, so I may make some popcorn.

(32,982 posts)My 1 qt pyrex bowl is the same size as the corn tortillas, so I grease the bowl and layer them. I do heat the torts 2/3 min in the toaster oven, I get a little more crunch. Decafe English Breakfast Tea.

For reasons known only to himself, FLFC is presently obsessed with his miniature tennis balls and is not requesting tastes as I eat.

(17,444 posts)Several reasons I've missed posting daily of late.
I've been napping when you folks are posting. TJ and FLFC are awake at all sorts of variable hours and I find I'm short of sleep. The only reason I'm posting right now is that my phone woke me up reminding me to put the garbage and recycling out for pick up.
The political pickle here in Virginia has upset me and I've taken several breaks from the internet this week.
Sometimes I'm not sure I want to share the results of my foraging for food here.
FLFC is the mascot. We gotta know!

(1,089 posts)Red hot chili (made in Instant Pot), spinach salad, cornbread from corn milled at The Mill at Anselma, crisp apple/berry cobbler (also made in Instant Pot). Used the "vegan under pressure" cookbook, one of my favorites.

Oh, and I made peanut butter cookies from a keto recipe! Just natural PB, one egg, vanilla, and sweetener. They came out delicious, but too crumbly. I'll try again but make them bigger and not cook them as long.
about the pbj cookies. I want to try making chocolate chip cookies with that no- or low-carb flour I ordered. Jovial einkorn wheat flour.
BTW, I noticed the grocery stores around here are finally getting this wheat in. The ShopRite had 2 kinds--Jovial and Red Mill.
ABOUT TIME they paid attention to the low-carbers!

(2,302 posts)So even Publix has things like coconut flour now. I need to really start learning from all the keto sites that have sprung up.

NJ Cher. I love rosemary and garlic roasted potatoes. Simply the best!

(55,014 posts)made up a quick dressing that turned out really good. I have a jar of homemade fake Good Seasons Italian mix (mostly salt, LOL) so I used a tablespoon of that, squeezed the juice of a few chunks of lemon and lime leftover from earlier this week, a bit of wine vinegar, a tiny bit of dry mustard, a teaspoon or so of honey, maybe a tablespoon of good olive oil and a quarter cup of mayo. it came out really good.
salad was just Romaine, cukes, cherub tomatoes, onion, and a chopped up carrot. that was about the end of fresh vegs in the house. I REALLY need to go shopping.
