I'm doing a vegetarian taco tower- layers of rice, frijoles, veggies, cheese in my 1 qt pyrex bowl that fits just right the local bodegas corn tortillias. Rice & beans mixed in a chipotle based sauce with cilantro & avovado.


(What kind of a nimnong gets pissy over a taco truck?)

It's a frozen "supreme" thick crust pizza, but I sliced up some leftover meatballs and some onions to add to it.

5. Lemon Shrimp Risotto with Vegetables and Parmesan

my weeknight chef (my son) complained about the extensive prep work. However, come to find out, he interpreted one cup of spinach leaves to be the entire 8 ounce bag, and it took him quite a while to stem that much spinach. Nonetheless, the risotto was very nice, accompanied by the $2.89 Sauvignon Blanc that was also in the dish (gotta love Aldis wines). Here's the recipe:

2 lbs ground beef, 3 med. zucchini, onion, garlic, 2 serano chiles, couple left over grilled green chiles, 4 chopped tomatillos, cumin, cilantro, and a can of chopped tomatoes

with more cilantro, el pato, and steamed corn tortillas. cheese optional.
