What's for Dinner, Fri., April 19, 2019

Shrimp, asparagus, and peas in an omelette served over pumpernickel or spelt bread.

Apple-red cabbage slaw. Has a Granny Smith, chopped cucumber, and dill in it. Vinaigrette dressing. I might add some golden raisins and toasted walnuts.

Dessert: low-carb blueberry cobbler made with almond flour.

1. I made cream of mushroom -onion soup

So I poured that over tuna and rice. I'm roasting broccoli in sesame sirrichia sauce, figured I need a spicy green veggie kick to govwith the mild tuna casserole. Decafe tea.


And since the cats get tuna juice, I get to live another day. 😼😼

Surf: Gigi Salad
Shrimp cut in half, steamed then chilled; fresh green beans, cut in half, steamed then chilled; diced tomatoes and cucumber; crumbled bacon; diced red onion, slices of garlic and a little crumbled Gorgonzola. Mix everything into a large bowl and marinate in olive oil and Balsamic vinegar. Salt and pepper to taste. The salad is served cold.

Turf: Filet Mignon
Broiled steaks and baked potatoes.

Chocolates and red wine for dessert.

Sounds soooooo good! I’m having leftover Mac and cheese (Vermont cheddar) with a 1/2 ton of roasted broccoli in it, sautéed carrots with honey and tarragon, and lemon water. Wish I had some blueberry cobbler....

6. We're having a meatball casserole

I had some turkey meatballs leftover, so I threw them in a casserole dish w/ some carrots, onions, green beans, garlic, rosemary, macaroni and a can of cream of mushroom soup (thinned a bit w/ the last of my homemade chicken stock).

My folks had a pasta dish: linguini tossed w/ sautéed shrimp, asparagus, summer squash, red bell pepper, onion, carrot and garlic. A little olive oil, pasta water and parm to complete a bit of a sauce. Sliced tomatoes on the side.

so tonight we are having another "flavor" of pre-marinated steak, this time herb and garlic with chimichuri

and a variety of chiles to go on the grill. I think there are some leftover home fried potatoes from the husbands breakfast, also tortillas. left over salad stuff as usual, too.
