Shrimp, asparagus, and peas in an omelette served over pumpernickel or spelt bread.
Apple-red cabbage slaw. Has a Granny Smith, chopped cucumber, and dill in it. Vinaigrette dressing. I might add some golden raisins and toasted walnuts.
Dessert: low-carb blueberry cobbler made with almond flour.

(32,975 posts)So I poured that over tuna and rice. I'm roasting broccoli in sesame sirrichia sauce, figured I need a spicy green veggie kick to govwith the mild tuna casserole. Decafe tea.
And since the cats get tuna juice, I get to live another day. 😼😼

(11,095 posts)Sounds soooooo good! Im having leftover Mac and cheese (Vermont cheddar) with a 1/2 ton of roasted broccoli in it, sautéed carrots with honey and tarragon, and lemon water. Wish I had some blueberry cobbler....
I enjoy your Whats for dinner posts so much. Thank you.

(38,559 posts)I had some turkey meatballs leftover, so I threw them in a casserole dish w/ some carrots, onions, green beans, garlic, rosemary, macaroni and a can of cream of mushroom soup (thinned a bit w/ the last of my homemade chicken stock).
My folks had a pasta dish: linguini tossed w/ sautéed shrimp, asparagus, summer squash, red bell pepper, onion, carrot and garlic. A little olive oil, pasta water and parm to complete a bit of a sauce. Sliced tomatoes on the side.

(55,010 posts)so tonight we are having another "flavor" of pre-marinated steak, this time herb and garlic with chimichuri
and a variety of chiles to go on the grill. I think there are some leftover home fried potatoes from the husbands breakfast, also tortillas. left over salad stuff as usual, too.
