What's for Dinner, Fri., April 26, 2019

Eggplant parmesan with homemade tomato sauce.

The eggplant will be breaded and baked.

The salad is already made, which has radicchio and Bibb lettuce in it.

While the RG is home from Italy, I'm on my own again tonight because to him, it's 11:30 p.m.!



p.s. Netflix watchers, there's a new series out called "Street Food." We watched the first one and enjoyed it.

Neither of us felt like cooking so the Landlady(!) ordered Chinese and I got sashimi.

Regarding "Street Food," amazingly, she has the show on right now! Have you watched Hairy Bikers? It's also quite good.

2. "Hope for the best" casserole

Gonna throw leftover Alfredo sauce, red sauce, and penne pasta in a baking dish - add in some diced grilled chicken and artichoke hearts - bake and hope for the best ! Maybe top with provolone and broil til melty and bubbly.

Those are the best meals! I make a “trash can” stew with ground beef, beef broth, stewed tomatoes and whatever bits and bobs I have in the pantry or fridge/freezer.

third time for this recipe that is actually for shish kebabs but is so fast and easy in the oven I seem to keep doing it that way.

made some dill yogurt sauce to go with since I didn't have any cukes for tzatziki, also had with some Trader Joe's hummus and pita chips, cherub tomatoes

blackberries for desert.
