What's for Dinner, Sun., May 5, 2019

Gloomy and rainy here today, so another soup day! The leeks are sauteing as I type. The recipe is from "Sunday Soup" cookbook and the soup is called "Just Greens."

Besides the leeks, it has one bunch of scallions, savoy cabbage, snow peas, and bacon. I have no bacon so if I don't get to the store to buy it, which I probably will, I may use ground pork. Or ham bits.

My Hungarian Mushroom Soup that I made a couple days ago turned out very good--so good I have no leftovers!

It's cold, damp and gloomy here, too. Time for some comfort food.

Turkey chili with lots of cumin, garlic, tomatoes, green peppers, kidney beans and Pete's Hot Sauce. On the side, minced onions, slices of jalapeño peppers, shredded Cheddar cheese, blue corn chips and salsa.

The Landlady(!) insists on a salad so it'll probably be a simple mixed greens affair topped with olive oil, vinegar and croutons.

I picked up a few boxes of berries this morning for dessert. Perhaps a shot or two of tequila for Cinqo de Mayo.

It has been a really tough week. So....I’m making standard comfort food, maybe even diner food.

A meatloaf with garlic, onions, kale, panko, sweet peppers, freshly-grated Parmesan, some roasted sweet potatoes, a side of Brussel sprouts roasted with walnuts and a tiny bit of maple syrup, and a giant green salad. There’s a big ole homemade carrot cake in the refrigerator.That’s for later, along with Moroccan Mint tea.

Tonight I’m actually going to slow down early and look over a few issues of Orion Magazine which I found in a free pile at our recycling center yesterday. Orion, carrot cake, Moroccan Mint. I’m so fortunate.

I stuffed it w/ the same sort of thing I put in stuffed peppers: ground beef, chopped up breakfast sausage, rice, onions, bell pepper, garlic, diced carrots, corn, oregano and basil.

I'm thinking of making some parmesean spaghetti on the side.

It's nice to have food in the house again.

Sides are steamed spinach and fresh pineapple.

Angus beef is a good quality beef straight up. The only thing better that I seem to have read about was some Scottish beef cow that was supposed to give primo beef without the stuff that the Japanese do with Kobi beef.

But if anyone wants to make everyday burgers from never frozen beef taste great, lightly salt it, wrap it in paper towels that get changed every other day, seal it in a plastic ziplock bag and dry age it for 2-3 weeks in the fridge.

Pretty simple to make fallback meal on busy days, which today abnormally was. For desert, sliced pears.
