Tonight we are having salmon sandwiches with dill and sour cream.
I am making cherry tomato-cucumber-onion salad.
Last night our friend fixed cioppino. I think she wanted to try out her new Taste of Home cookbook. It's the big one with something like 40 years worth of recipes in it. Anyway, I noticed it on the counter when I walked in, opened to the cioppino recipe. She is now doing recipe testing on a volunteer basis for them; thinks it's fun. The cioppino had mussels, clams, and cod in it.
The RG made these sandwiches to take over and everyone loved them. One kind was like a cloud when you tasted it. It was a small brioche roll and inside he put some kind of fluffy cheese and an apple slice. Really, just unbelievably good. The other was some kind of macho man sandwich, as he called it. It was grilled Italian bread, very crusty, and on top of that melted cheese, then roasted pepper and then another slice of something like cappicola.
He also made a red leaf salad with fennel, but everyone was so stuffed that the salad kinda' got ignored.
The dessert was homemade shortbread with ice cream. The ice cream was spiked with brandy, except for mine.
Of course there were many wines, so everyone but me tasted them. Wine is in the category of coffee with me these days.
