We're having Beyond burgers tonight with all the trimmings: lettuce, tomato, red onion, and a cheese slice. Pickles, too.

As an appetizer, cheese balls.

Cucumber salad on the side.

1. Broiled salmon

With some leftover Potatoes Romanoff

2. Pork chops with a spicy rub, mashed potatoes, roasted asparagus.

3. Leftover gluten free pasta iwth chicken from earlier in the win Vegie sticks,plums and

2 cookies with coffee for dessert

4. I ate with Dad tonight

I made him a meatloaf w/ onion gravy, mashed potatoes, and I steamed the last of the broccoli, cauliflower and yellow squash.

I'm pretty sure he had some butter pecan ice cream for dessert after I left.

6. It means a lot to me to be with him

Not every day, but once in a while, I hear a story I hadn't heard before. Something from his youth, or something from his life w/ mom. I only cook for him (and my sis) 3 times a week, but it means the world to me. I like to cook. I'm no gourmet, and I'm limited to what my sis and Dad purchase, But I'll cook what they want to eat, and the reward is exponential.

Stopped in at a local sports bar after work. ..they do pressure fried chicken and Jo Jo’s and of course beer.
