Chicken paillard.
Rustic bread with bacon-wrapped pate', red onion slices, Dijon. Salami slices, various cheeses from the farmer's market trip yesterday.
One kind was a triple cream cheese with pistaccios and figs.
Coleslaw, very creamy. Broccoli with red pepper.
Dessert: cold black tea with shortbread cookies.

(1,697 posts)Tonight we had cod with Romesco sauce. My son had made his peach, cucumber and feta salad; and leftover from this noon's church potluck, German style sweet and sour red cabbage with apple.
I had also made an easy casserole with chicken, yukon gold potatoes and green beans for the potluck. It seemed to be well-liked. Last night, we had Somali style chicken and vegetables on rice. I made it less spicy than the recipe indicated, but it was still at the edge of what I can eat. Although, it was one of those dishes, where when you get over the original hotness, you start to appreciate the subtlety of the spicing. That Somali recipe looks so interesting. Might try that when the RG is away this next month.

(22,119 posts)So you make a rub with lemon juice, rosemary, salt, pepper and a couple of big cloves of minced garlic.
Roast with the vegetables @ 450. I used carrots, celery, butternut squash, a quartered Vidalia onion and did not have room for the potatoes I had planned to include. Parsnips rutabagas turnips or beets would also work.
First time to make this, so we will see but I truly don't think it can fail unless I fall asleep and burn it up.

(130,146 posts)Thinking of making beef stew soon, and wondering about substituting somethings for quartered potatoes. Parsnips, rutabagas turnips OK? Which would you prefer? I'll have peas, carrots, & jarred pearl onions too.

(68,351 posts)with everything but the kitchen sink...and homemade ranch dressing. Everything was gluten free and tasted good. For dessert I hade a chocolate bar and some lime greek yogurt (low fat). I have some tasty grapes too. Happy Sunday.

It was very quick, and does have a "stroganoff" flavor. I couldn't find the mushroom gravy called for, so I got savory beef gravy and sliced 3 mushrooms in it. I might cut back just a little on the dijon, it's good but doesn't need quite that much. I served it with grated asiago cheese and sliced green onion.
Definitely a tasty and easy weeknight dinner.
