Productive week in the kitchen

Last week, I made a batch of crumbtop blueberry muffins, which lasted for several days. I made eggplant tikka masala, with rice, made a zucchini casserole, flank steak smothered with baby bella mushrooms, red and green onions. I got a small harvest of tomatoes from my plants, and after eating several tomato sandwiches on my homemade bread, I roasted some of the tomatoes and froze them for use in the dead of winter. I also made a small batch of creamed tomatoes, using a WWII era recipe. I went to Cleveland for an eye appt. and got a break from cooking. Back at it again Sunday, baked 2 loaves of bread (one for a neighbor), and making a meatloaf and mashed potatoes so I don't have to cook for a few days.

So glad that it has cooled down, so I can cook! But glad for a break, so there isn't a pile of dishes in the sink!

So what did you cook,bake, grill?

My late sister-in-law was my childhood friend(we started first grade together). We shared a love of cooking starting at a young age. When we were 12 or 13, we get together and cook a meal, fried chicken, mash potatoes, gravy, fresh veggies, strawberry cake, all on one day. Our conversations always turned to food and what new recipes we were going to try,

After we were grown and I moved away, when I came to Texas to visit, we'd go to the kitchen and start cooking.

I still use many of her recipes. As a matter of fact, I bought some buttermilk this week to make this cake. I have some lemons I need to use, so think I will make a lemon curd filling. This is an easy recipe and makes a nice white cake.

Jeanette's Easy Buttermilk Cake

2 1/2 plus 6 Tbsp flour 3/4 cup butter
1 1/2 teaspoon baking powder 1 cup buttermilk
3/4 teaspoon baking soda 2 teaspoons vanilla
1/2 teaspoon salt 3 eggs unbeaten
1 2/3 cup sugar

Sift dry ingredients, set aside. In large mixing bowl, stir butter just to soften. Add dry ingredients, add buttermilk and vanilla. Mix till flour is dampened, beat 2 minutes at low speed, add eggs, beat 1 minute longer. Bake at 350 degrees for 35 minutes.

For better results use 3 layer cake pans, bake at 375 for 25 minutes. Ice with fluffy frosting.

Note: I usually put raspberry preserves between the layers and make a white cream cheese frosting. Then I cover the frosting with coconut.

Maybe I'll try this recipe!

Have you ever soaked your chicken in buttermilk several hours to overnight, then breaded and fried it? Oh my, so good!

I've had the best times working in the kitchen and met some of the nicest people. I had several jobs in restaurants, and one hospital, as a cook, and learned a lot of things from the more experienced people.
