I had some panko-crusted eggplant slices ready to make a vegetarian sandwich, so I made the sandwich with mozzarella, grilled onion, and chipotle mayo on ciabatta. Flavors are blending now so it will be ready in an hour or two.
I made a tossed salad with romaine and red leaf lettuce plus the usual raw vegetables like peppers, radish, cucumbers, and small pieces of cauliflower florets. Not sure on what dressing to choose for it, though.
I also made chocolate cheesecake but I'm not thrilled with the way it turned out. I tried to keep the calories down so used low fat milk and it's really kind of boring. I added walnuts to the top and that helped a little. I think it needs chocolate shavings.

(1,704 posts)The usual veggies, and also a small bit of lacinato kale - made it more colorful. I like brown rice, my menfolk do not. I get my way tonight.
I also made soup for Monday - lentil soup with leeks and bacon.

(1,704 posts)No help after the fact, but I wonder if coffee and/or extra vanilla would help the flavor. After the fact, yeah I think nuts and chocolate shavings are the way to go.

I had Mulligatawny soup, chicken Bhuna, rice pilaf, aloo paratha and mixed pickles.
All of that was washed down with a super-sized Taj Mahal beer.

(10,423 posts)I coated it with cornmeal seasoned with salt & pepper. The fried it in a non-stick skillet using a very small amount of olive oil.
Lots of butter & salt on the corn. I have always loved corn on the cob.

(20,955 posts)the tomato paste. and green pepper, but i can improve that. i make a semi putinesca(sp) sauce. cherry tomatos, onions + celery + italian spices.

Because when I first met the RG some 25 years ago, I would invite him over for dinner. Little did I know he was a culinary genius! If I'd known, I would have been too intimidated.
I would always fix him this recipe I found in the NY Times called "chicken puttanesca." He would always enjoy it, or at least he said he did.
Years later, he (fluent in Italian) told me "chicken puttanesca" meant "whore's chicken." He said he always loved being invited for whore's chicken.
