Crab-mushroom quiche. I'm using Swiss cheese, even though it's specified to use cheddar (Taste of Home recipe). Most crab quiches use Swiss and I think it will taste better.
For a crust, I'm making a Mollie Katzen recipe--a potato-cheese crust.
Green salad, tossed with cucumber, red onion, and tomato and chipotle ranch dressing.

(4,516 posts)Mashed potatoes, spinach salad. Its been gross and rainy here all day. Its my day off, got a new library book to read, so Moms meatloaf (and subsequent food coma) is my plan for the evening. Theres cheesecake for dessert, too.
The crab quiche sounds delicious! Quiche and a green salad is a perfect meal, imho.

Ingredients
2 tablespoons olive oil4 cloves garlic, peeled and crushed1 medium onion, coarsely chopped2 teaspoons ground cumin2 teaspoons ground coriander1 1/3 quarts vegetable stock3 medium potatoes, peeled and chopped1 (15 ounce) can garbanzo beans, drained1 cup heavy cream2 tablespoons tahini2 tablespoons corn starch1/2 pound spinach, rinsed and choppedground cayenne pepper to tastesalt to tasteAdd all ingredients to list

Heat olive oil in a large pot over medium heat, and stir in garlic and onion. Cook until tender. Season with cumin and coriander.
Mix vegetable stock and potatoes into the pot, and bring to a boil. Reduce heat, and simmer about 10 minutes. Stir in the garbanzo beans, and continue to cook until potatoes are tender.
In a small bowl, blend the heavy cream, tahini, and corn meal. Mix into the soup.
Stir spinach into the soup. Season with cayenne pepper and salt. Continue to cook until spinach is heated through.

(10,378 posts)Got home late, so I just added some fresh chopped tomato, serano, garlic, onion and 1/4 cup frozen edamame to a can of progresso soup.
And you're welcome NJCher, I hope you try that pasta sometime
