I had the greatest vegetable plate for a late afternoon lunch, so I think I will just pick up a cauliflower pizza for later when I'm out.
What I had that was so good was a sheet pan roast of vegetables: kabocha squash, halved Brussels sprouts, lots of dried cranberries (which I marinated in orange juice to re-hydrate them), and toasted pecan halves. Over this goes a dressing of a little olive oil and maple syrup.
Strawberries with rice pudding. That and ginger tea will top off the evening....and give me great munchies for the second night of crime shows!
p.s. PJMck, hope you survived lunch, hahah.

(32,006 posts)Did you roast everything for the same amount of time or did you have to roast the squash and Brussels sprouts longer? Was it difficult to cut up the kabocha squash?
