My son, bless him, will be getting my groceries for me tomorrow and dropping them on my porch. It is also his birthday, so I would like to make him a cake, which I will leave on the porch for him. Hes low carb, so it has to be a low-carb cake. This would ordinarily not be a problem, but I dont have that many ingredients here. What I have to work with:
A large bag of Birch Benders low-carb pancake mixthis will probably be the main ingredient
Splenda
Toasted unsweetened coconut
Butter
Cream cheese
Eggs
Heavy cream
Lemons
I was thinking maybe I could do something kind of like pound cake in a loaf pan. Maybe using eggs and a little butter in place of the liquid called for in the pancake mix, add some Splenda for sweetness, and lemon rind and coconut for flavor. Does that sound workable or am I just asking for a mess?

A stick of melted butter
6 eggs
2/3 cups sugar-free vanilla syrup (the kind you put in coffee)
2 cups finely shredded toasted coconut
Grated rind of two lemons
Mixed it all up and baked it in two loaf pans at 350 for 45 minutes. Made two kind of flat loaves of fairly edible cake. A bit on the dry side, but okay.
