Peppered Shrimp Alfredo... so yummy

Ingredients

12 ounces penne pasta
1/4 cup butter
2 tablespoons extra-virgin olive oil
1 onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1/2 pound portobello mushrooms, diced
1 pound medium shrimp, peeled and deveined
1 (15 ounce) jar Alfredo sauce
1/2 cup grated Romano cheese
1/2 cup cream
1 teaspoon cayenne pepper, or more to taste
Salt and pepper to taste
1/4 cup chopped parsley
Directions

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
Meanwhile, melt butter together with the olive oil in a saucepan over medium heat. Stir in onion, and cook until softened and translucent, about 2 minutes. Stir in garlic, red pepper, and mushroom; cook over medium-high heat until soft, about 2 minutes more.
Stir in the shrimp, and cook until firm and pink, then pour in Alfredo sauce, Romano cheese, and cream; bring to a simmer stirring constantly until thickened, about 5 minutes. Season with cayenne, salt, and pepper to taste. Stir drained pasta into the sauce, and serve sprinkled with chopped parsley.

we like a bit of a bite so i added a tad more cayenne. and i used five cloves of garlic. we like our garlic. and i dont measure anything. oh, and i chopped some tomatoes and put on top. delicious.

Yesterday I tried one of their Shrimp/Asparagas / pasta recipies. Looked good but turned out meh.

Looked at the one you used cause I still have shrimp left. Curious. Was it worth it?

delicious. 17 and 14 yr old sons, hubby and i all agree. and oldest son said best pasta dish i have yet to make. it is a keeper.

our family goes moderation. not that there was any moderation in all the cream/butter, ect. but it did have its veggies.

we dont eat huge amounts, we eat lots of healthies, and dinner is the only one i dont look at the ingredients. the rest of day, what i eat is way on the side of healthy

so

moderation works for us.

spouse is determined to keep his blood pressure low without medicine so we're pretty extreme during the week. We slide a little on the weekends but still watch the portions.

I am not at all happy with this plan. I CRAVE buttery noddles, pizza and Chinese food. I dream of fried chicken and cheese and salted pretzels!

Some things just taste bad without salt. Others I can manage with some Mrs. Dash or something.

*sigh*

i was so extreme when i was younger, it was the point of unhealthy. i can do that too easily. so i dont play with it much.

but if there is a health issue, more power to you. it is hard. but worth it.

both my wife and I love to cook and this was outstanding!

As far as the "unhealthy" ingredients, I'm simply not buying it.

In the last few days someone posted an OP asking why the French can eat all this shit and remain healthy. In my opinion it's because they don't eat the crap, processed foods that Americans do.

I retired in October of 2010 from a job as a Union Sheet Metal Worker who did serious, hard, physically demanding work and I was in incredible shape because of it. When I retired I immediately had two major operations (Rotator cup and Knee replacement)
That essentially kept me in bed for the better part of over a year. Because I now have the time, we eat almost NO processed food. I cook, I can, I bake and I do not shy away from the butter, salt, fat, etc.
I have only gained a couple of pounds even while living a sedentary life because I don't eat processed shit. I can't remember the last time I have gone to someplace like McDonald's.

Now that my knee is better, I just bought a bike. Next Month I will buy some weights. I expect by Christmas I will be in excellent shape without altering my diet. Butter, oil, etc. but without corporate, processed garbage.

I could be wrong but life is too short to live without good food.

it is finally gone.

had another recipe i wanted to put up, but i didnt like how it turned out. pablanos and i roasted and peeled without reading instructions. i think i was suppose to leave alone, stuff and then cook. cant imagine eating with skin on, but gonna try it again in a week or so. if it is good, i will put it up. sounds delicious. was ok as was....

but i agree. i was obsesses on health to the point of screwing me up big time. i got married and hubby refused the fake butters, ect.... we dont over do. lots of veggies and some fruits. dont worry about what is in a recipe. and eat lite during the day. a lot of lite dinners. works for us. none of us gain weight. we rarely eat at a restaurant and do a fast food every two or three weeks. not big on sodas and rarely eat desserts, though i like my candy bars in the evenings periodically, lol...

IF we had health issues, then that would be different.

after obsessing, moderation is my motto.

with all those ingredients the only thing needed to make your own Alfredo would be a little more heavy cream (to reduce fat could add a little flour to the melted butter and use milk instead of cream) and some white wine. Sounds delicious..some fresh asparagus would be good in there too..

yes, it would. that is a very good tip. i love adding stuff to a recipe. good idea.

i dont know anything about making alfredo and changing the recipe out in that manner. i needed something fast and easy for a throw together meal, as i had to be at a track meet until late in the afternoon.
