What's for Dinner, Mon., June 8, 2020

Ribeyes with the bone cut out and seasoned with garlic and parsley.

Vegetable side dish is carrots, cabbage, and potatoes.

Tossed green salad with goat cheese, sauteed zucchini, yellow grape tomatoes, and red onion. Also fresh peas from the garden. The RG made croutons from rustic bread to go on the salad.

For dessert, we're splitting a Portuguese egg custard tart.

2. leftovers

too many leftovers in the refrigerator to justify cooking anything else.

Leftover steak & potato
leftover stuffed pepper
leftover veg

There's even some soup that I made from leftovers over the weekend.

3. Trying to duplicate a meal I had in Italy

Almost exactly a year ago in Locorotondo. A simple but delicious lunch. Spaghetti with a simple red sauce, fresh herbs, and green beans. Other fresh vegetables optional. It was an incredible lunch last year, not quite able to duplicate tonight. Trying a couple of other veggies. Tried making a carrot top pesto, too.

With vodka sauce. It's a one-pot Food Channel recipe, simple and really good.

I also got a bottle of Alamos malbec

5. How'd you cook the ribeyes?

Since I think the RG doesn't like grilling, did you broil them? Inquiring taste buds want to know!

I'm solo in the mountains this week so I grilled a couple of hot Italian sausages along with with some mini peppers. All of that went into potato hot dog rolls. I grabbed more lettuce from the Landlady(!)'s greenhouse to make a salad. And a glass of chianti to wash it all down.

A banana and some nuts for dessert.

And now a brandy as I sit down to read "The Classical Style" by Charles Rosen.

Made Swedish meatballs using vegan “meat” and coconut cream for the sauce. Substituted a stronger shiitake mushroom for my usual baby Bella’s to counteract the strong flavor. Served over homemade egg noodles.

Carnivores in my family didn’t notice it wasn’t meat and dairy. Woot!

Red quinoa and tomato (canned salad cherry toms from Aldi so good) with artichokes over fresh spinach as salad.

maybe you could consider publishing your recipe. I'd sure like to try it, but if you don't feel up to it, I can give the ingredients to the RG and I'm pretty sure he could figure out how to do it.
