Weird substitution question

I have an Asian recipe that calls for Madeira (beef and snap peas (garden has plenty)). I have mirin but no Madeira and don’t want to invest in a bottle. I think the mirin will work as it is sweet like the wine. So I am thinking replace the Madeira with 50% dry sherry and 50% mirin.

Thoughts?

MM is right. The dry Sherry is probably your best bet then. cayugafalls Jun 2020 #3

Whichever substitute you choose should be similar. That said, any fortified wine could suffice. Straight up sherry, vermouth, dry port or Marsala would be good options. Sounds like a fun recipe.

And I have no sweet fortified wines. Have vermouth and sherry, both dry. I suppose I can use the dry sherry and add a bit of sugar too.
