Shrimp and grits with salmon mousse.
Endive leaves filled with cannellinis and chopped celery, red onion.
Dessert is vanilla Swiss almond ice cream with shortbread cookies.

(5,661 posts)Even tho its late I had to write about these. I baked the taters in the oven (vs micro like usual). Just used canned beans and rinsed then added water to barely cover, some garlic powder and ground cumin. To serve I spooned the bean mixture that had simmered onto the potato and covered with sliced green onion, cilantro, sour cream and fresh lime juice. It was sooooo good!
Also had cod, and some rice with cilantro and lime juice. But the stuffed potatoes were the star of my plate. Mmmmmmm!
Tomorrow will use the other sweet potato and the rest of the beans and rice to make vegetarian tacos.
Malibu rum and pineapple juice goes very well with this too!
