What's for Dinner, Mon., Aug. 10, 2020

Mexican meatball stew. The meatball is wrapped in a slice of crispy bacon. Has cannellinis, tomatoes, and is topped with con queso cream and drizzled with hot pepper sauce. It was baked in a cast iron skillet in the oven and the sauce is very rich and thick.

Baby arugula salad with toasted pignolis and red and yellow grape tomatoes.

Cucumber salad made with Persian cukes, red onion, sour cream, and dill.

Dessert is sliced peaches and vanilla rice pudding with crumbled shortbread cookies. (easy dessert)

I made decaf sun tea and am having a big glass.

Time to deal with the peppers in the garden, prolly will chop up a zuke for the stuffing killing two birds with one stone.

I normally eat low-carb, but I take a break after surgery (this was another step toward boobie reconstruction) and its accompanying antibiotics. Tonight will be my farewell to carbs, and I'm going out in style! I also picked up some yummy-looking chocolate at Aldi for later.

Mashed potatoes for Mr. Bayard, brown rice for me and the pupsters. Green beans. Fresh sliced tomatoes.

4. Sounds good. I made a hash out of leftover pork tenderloin,onions, zucchini and potatoes.

I put two poached eggs over the top of the hash. I also had strawberries. For dessert, I had a latte and a chocolate nut edge bar.

Neither Al or I slept well last night, so I wasn't up to putting in much effort into dinner.

I'll make up for it tomorrow. Plus, I'm going to make homemade zucchini bread.

(I did, however, make a big batch of popcorn for us to snack on tonight. I wanted to do that BEFORE dinner dishes were washed, so I did it before I made dinner.)

That I added some of my herbs to. Basil, rosemary and oregano. Also, two big cloves of garlic chopped them mashed with Himalayan pink salt. Then breaded in Italian bread crumbs and fried in EVOO.
Perogis stuffed with mashed potatoes and cheddar and then lots of chopped garlic and parsley added just before turning off the heat. The garlic toasted perfectly - for a change! 😁

Can I get a link or possibly some instruction to that Mexican meatball stew recipe? It sounds wonderful! I can see it bubbling in the cast iron. Omg!
