I found a nice cheese shop in rural Texas

It's basically a 4 generation family operation. They have their own specialized cows and sheep making the milk they are using. All of their cheeses use unpasteurized and non-homogenized milk, but they sell no cheeses aged less than 60 days so it's 50 state legal to sell. I would have liked to sample some younger cheeses, but unfortunately they can't sell those in Texas.

At any rate I came back without about 5 lbs of cheese. I bought 3 different Havarti cheeses, 3 different cheddar, and 1 blue cheese.

I made a French style omelet with their blue cheese, spinach, and some saffron that was simply divine.

5. They said redneck cheddar is their best seller

It's a mild to medium cheddar that has some great flavor. Old Redneck is the same cheese, just aged longer. My favorite is their blue cheese, but Texas Star was a close second and would ship better I suspect. All of the ones I sampled were excellent with more complex flavors than you'll find with mass produced cheese.

8. I want them all! That might make it worth the 3 hour drive, to avoid that much shipping.

They spoke about another shop somewhere in Oklahoma so they may have more.

We go down HWY 67, right thought Dublin, to visit my sister out in West Texas. Dublin is a neat town. Home of the old Dr. Pepper factory that made the drink with real sugar (not anymore), we always stopped there. It was where the "Rodeo Train" originated to take Rodeo Shows to Madison Sq. Garden.

Will be stopping to buy some cheese for sure. Gotta try that Redneck Cheddar.

10. The factory is still there although no longer Dr Pepper

The still give tours and have the old timey soda fountain. They have their own flavors all made with sucrose. Their Ginger Ale is the best I’ve had.

The Dr. Peppers are not as good as they were when they were made with cane sugar.
